It's week 14 and I'm going on vacation!


Here's what I made:

This was delicious with unique flavors and really simple to throw together - a classic Isa recipe! This could be a new favorite. I didn't make any substitutions but I did add beans to "bulk it up" as the recipe suggests.

This reminded me so much of a Thai baked tofu dish that my dad used to make when I was little. I was worried about it not cooking up well the next morning (I've never done an overnight marinade with raw mushrooms in the mix) but it came together really well. I also tried it in a breakfast taco with some of the peanut satay sauce from a previous recipe - delish!



Weekly reflection

While I didn't cook a ton of new recipes this week, these were really winners! Definitely in the rotation. I also made the easy weeknight pad thai and red hot tempeh sandwich this week to have some familiar favorites before I head out!


I'll be on a break from my cookbook project until I return from vacation!
